How to Properly Thaw Frozen Meat and Minced Meat? A Mistake That Threatens Food Safety

Properly thawing frozen meat is important not only for preserving its taste and texture. When thawed using an incorrect method, bacteria can multiply rapidly, even if the meat still appears frozen on the outside.

The most common mistake is leaving it on the kitchen counter for several hours.

Why shouldn't you thaw meat at room temperature?

When frozen meat is left at room temperature, its surface quickly warms up, while the inside remains frozen.

In such conditions, the temperature on the surface falls within the range where bacteria multiply most rapidly. This is why specialists do not recommend this method.

The best way - slow thawing in the refrigerator

The safest method is to thaw meat in the refrigerator.

Transfer the frozen product to the bottom shelf of the refrigerator and place it on a plate or in a container to prevent any released liquid from touching other products.

The time depends on the size of the meat:

Piece SizeThawing Time (in refrigerator)
Small piecesApproximately 12-24 hours
Large pieces24-48 hours or more
Whole chicken1-2 days, depending on size

This method best preserves both safety and quality.

If you don't have time

If you need the meat quickly, use cold water. The meat should be hermetically sealed. Place it in cold water and change the water every 30 minutes. This will thaw the meat much faster, but you must start cooking immediately. Using hot water is not recommended.

Can I use a microwave oven?

Yes, if your microwave oven has a Defrost function. However, some parts of the meat may partially cook during this process, so you should cook it immediately after thawing in the microwave.

Minced meat requires special attention

Minced meat spoils faster than whole cuts of meat. If you thaw frozen minced meat in the refrigerator, it's best to cook it within 24 hours. If you thaw it in water or a microwave, start cooking immediately.

Can frozen meat be cooked directly?

In some cases - yes. If the meat is cut into small pieces or is minced, it can be cooked directly in a pan or pot. However, the cooking time will increase by approximately 50% compared to normal.

Can it be refrozen?

If the meat was thawed in the refrigerator and kept at a safe temperature during that time, it can be refrozen. However, the quality may slightly deteriorate, as repeated freezing affects texture and juiciness. If the meat was left at room temperature or thawed in warm water, refreezing it is not recommended.

Properly thawing frozen meat is a simple process, but mistakes made at this stage often increase the risk of food poisoning. The safest choice is always slow thawing in the refrigerator.
