Summer is the best time to stock up on seasonal berries for winter. When frozen correctly, strawberries, raspberries, and blueberries largely retain their taste, aroma, and beneficial properties, and in winter, you can use them in desserts, smoothies, porridges, yogurt, and various baked goods.

If you simply put berries in a bag and place them in the freezer, they will most likely stick together and lose their shape after thawing.

What should we pay attention to?

For freezing, choose only fresh, firm, and undamaged berries. Damaged, softened, or moldy fruits will spoil the entire batch, so be sure to sort them out beforehand.

Wash the berries thoroughly with cold running water and then dry them completely. Excess moisture will form ice crystals during freezing, which negatively affects quality.

How to freeze - step-by-step

  • First, arrange the berries on a dry surface - a tray or board - so that they do not touch each other;
  • If the fruits are large, you can cut them in half or quarters, but it is best to freeze small strawberries whole;
  • Leave them for several hours until they are completely frozen;
  • After freezing, transfer them to an airtight bag or container.

This way, each fruit will remain separate, and you will be able to take out only the desired amount when needed.

In what containers should they be stored?

The best choices are:

  • Special freezer bags;
  • Airtight plastic containers;
  • Vacuum bags, if you have the option.

It is desirable to release as much air as possible from the packaging, as this will preserve the berries better and prevent them from absorbing freezer odors.

How long do frozen berries last?

If the freezer temperature is -18°C or lower, strawberries, raspberries, and blueberries will last for approximately 8-12 months without significant loss of quality. They still have the best taste and texture in the first 6-8 months.

How to use frozen berries?

If you are using berries for smoothies, compotes, or baking, thawing them is not necessary.

If you want to eat them in a dessert or with yogurt, it is best to thaw them slowly in the refrigerator - this will help them retain their shape and aroma better.

Devoting a few hours during the season is enough to have quality berries on hand all winter long.
