Prawn cocktail

Prawn cocktail is an elegant, classic appetiser featuring tender prawns arranged over crisp lettuce leaves. Coated in a rich, creamy sauce spiced with Tabasco, Worcestershire, and paprika, it offers a harmonious blend of textures and savoury tang. Serve well-chilled as a delightful party starter.

  • Lemon juice30 ml
  • Vinegar (White Wine)15 ml
  • Worcestershire sauce15 ml
  • Tabasco sauce2 ml
  • Double cream15 ml

    Bring a large saucepan of water to the boil and add a squeeze of lemon and glug of vinegar. Add the whole prawns and cook until they rise to the surface. Drain and transfer to a bowl of ice-cold water.

    Peel the cooled prawns, leaving one prawn whole per serving (for the garnish).

    Cut the Little Gem lettuce in half and place in ice-cold water to crisp it up.

    For the sauce, mix all the sauce ingredients together.

    To assemble the cocktails, drain the lettuce and pat dry with kitchen paper (or use a salad spinner). Arrange two-thirds of the leaves in martini glasses or small bowls.

    Shred the remaining leaves and add to a mixing bowl. Add the peeled prawns and a spoonful of sauce. Top with the unpeeled prawn with a sprinkling of cayenne pepper and a few thyme leaves.
