Tomato Sauce
This delicious, traditional tomato sauce is an integral part of the Georgian table. Its fresh, sweet-sour taste perfectly complements grilled meat, chicken, or fish, as well as many vegetable dishes. It's easy to prepare and will truly enrich your meals.
Ingredients

Peel the tomatoes. For this, you can score them crosswise and immerse them in boiling water for 1-2 minutes, then in cold water. The skin will peel off easily. Finely chop or grate the peeled tomatoes.

Finely chop the onion, garlic, cilantro, parsley, and green chili pepper (if using).

Place the chopped tomatoes in a pot and cook over medium heat. Simmer for about 15-20 minutes until the liquid reduces by half and the sauce thickens. Stir occasionally to prevent sticking.

Once the sauce has thickened, add the chopped onion, garlic, cilantro, parsley, green chili pepper, salt, and black pepper. Mix well.

Continue to simmer over low heat for another 5-7 minutes to allow the flavors to meld together.

Remove from heat and let cool. The sauce is best served at room temperature or slightly chilled.
