Caramelized Pork Ribs
Caramelized pork ribs with balsamic cream and chestnuts - David Tsatsanashvili's original recipe. A delicious dish that will amaze your guests with its unique aroma.

Boil the pork ribs for about 30 minutes, until tender.

Dry the boiled ribs thoroughly.

Heat the oil to 180 degrees Celsius and fry the ribs until golden brown.

Add honey, sesame seeds, cinnamon, cloves, chopped walnuts, hazelnuts, cashews, crushed red pepper to the pan and caramelize.

Balsamic cream: Add 50g of powdered sugar and 50g of balsamic vinegar to 250g of mascarpone cream. Stir well, add chopped cilantro and red pepper.

Chestnut preparation: Boil the chestnuts halfway, then peel them.

Peel and fry in a pan with fat. Add cinnamon to taste.

Raspberry sauce: Place the raspberries in a saucepan, add 50g of sugar and 10g of agar-agar. Once boiled, strain.
