Braised Beef Stew
This traditional Georgian braised beef stew is a hearty and aromatic dish, perfect for cold weather. Slowly simmered beef with fragrant vegetables and spices creates an unforgettable flavor. Serve hot with fresh bread.
Ingredients
- Red wine (dry)250 ml
- Beef Broth700 ml
- Vegetable oil30 ml
- Cilantro (Fresh)1 bunch

Heat oil in a large pot or Dutch oven over medium-high heat. Season beef with salt and pepper, then sear on all sides until browned. Remove beef from the pot and set aside.

In the same pot, add chopped onion and carrots. Sauté for 5-7 minutes until softened. Add minced garlic and tomato paste, sauté for another 2 minutes until fragrant.

Pour in red wine and stir well, scraping any browned bits from the bottom of the pot. Simmer for 2-3 minutes until most of the wine has evaporated.

Return the beef to the pot. Pour in beef broth to cover the meat. Bring to a boil, then reduce heat to low, cover, and simmer for 2-2.5 hours, or until the beef is very tender.

At the end of cooking, taste and adjust seasoning with salt and pepper if needed. Garnish with chopped cilantro and serve hot.
