Date and Almond Energy Balls
These healthy, no-added-sugar energy balls are perfect for a quick and nutritious snack. The natural sweetness of dates combined with the crunchy texture of almonds creates an irresistible treat that will keep you energized.

Ensure dates are pitted. If dates are very dry, soak them in warm water for 5-10 minutes, then drain and pat dry.

In a food processor, add the almonds and process until finely chopped but not a powder. Transfer to a separate bowl.

In the same food processor, add the pitted dates, shredded coconut, vanilla extract, and salt. Process until a sticky paste forms. You may need to scrape down the sides.

Add the chopped almonds back into the date mixture in the food processor. Pulse briefly until well combined. The mixture should be sticky and hold together.

Take about 1 tablespoon of the mixture and roll it into small balls. If desired, roll the balls in extra shredded coconut for coating.
