Delicious Hake Risotto by Nutsa Surguladze
This is a delicious and very nutritious risotto recipe, made with hake fillet and mushrooms. It's easy to prepare and perfect for dinner.
Ingredients
- Dry White Wine120 ml

- Cream100 ml

Chop the mushrooms into small pieces.

Sauté the mushrooms in oil with salt.

Transfer the mushrooms to a separate container.

Sauté the onion in the same pan.

Add the rice and fry for 2 minutes.

Pour in the white wine, and once it evaporates, add 250 ml of broth and cover with a lid.

When the broth evaporates, add more and continue cooking. Cook the risotto on low heat for 20-25 minutes.

When the rice is cooked to an 'al dente' texture, add the cream and grated Parmesan cheese. Salt to taste.

Fry the hake fillet in oil over medium heat, 2-2 minutes on each side.

When browned, add the butter and leave in the pan for another 2 minutes.

Cut the crispy hake fillet into small cubes.

Place the rice on a plate, top with fried hake fillet, mushrooms, and grated Parmesan cheese. Garnish with a little chopped parsley.
