    Cook quinoa according to instructions (80g dry). Let it cool.

    Finely chop or blend the fish fillet.

    Add cooked quinoa, black pepper, chopped parsley, dill (if using), lemon zest, dried onion and garlic to the fish fillet. Add salt to taste.

    Wrap the fish mixture in iceberg lettuce leaves, similar to cabbage dolma.

    Sauté finely chopped onion in ghee in a pan.

    Add grated tomatoes and sauté slightly.

    Place the dolmas in the pan, cover with a lid, and cook over medium heat for 10 minutes.
