Gyoza with Shrimp and Japanese Sesame Paste Sauce

Prepare the dough: Mix flour and water, knead into an elastic dough, and let it rest for 30 minutes.

Prepare the filling: Chop shrimp, onion, garlic, and cilantro. Mix together.

Roll out the dough into thin sheets and cut out circles. Place filling in each circle and seal into gyoza shapes.

To prepare the sauce, mix soy sauce, rice vinegar, and Shirbakhti hot paste (Adjika).
