Indian-style Cauliflower
Cauliflower, fried in crispy batter and stewed in a sweet and spicy Indian-style sauce. This dish is a great choice for vegetarians and those who love Asian cuisine.
Ingredients
- Soy Sauce30 ml

- Sunflower Oil (for frying)50 ml
- Olive Oil30 ml

- Sweet chilli sauce30 ml
- Tomato Sauce30 ml

Separate the cauliflower into florets, season with salt, and microwave for 5-7 minutes (or blanch in salted water).

In a bowl, add flour, 2 tbsp cornstarch, 1/2 tsp paprika, 1/4 tsp cayenne pepper, minced garlic, salt, ginger, and 1 tbsp soy sauce. Mix and add enough water to achieve a sour cream consistency.

Coat the cauliflower florets in the batter and mix well.

Fry in a deep fryer or in a deep pan with plenty of oil. Transfer the fried cauliflower to a paper towel-lined surface.

In a separate bowl or glass, dissolve 2 tsp of cornstarch in 1/4 cup of water.

Heat olive oil in a pan, sauté garlic, add chopped green onions, then add julienned bell pepper and cook until the vegetables soften.

Add vinegar, sweet chili sauce, tomato sauce (or tomato paste), soy sauce, and crushed red pepper. Gradually pour in the cornstarch water, stirring constantly until the mixture thickens.

Bring to a boil and add the fried cauliflower, add salt to taste, simmer for 3-5 minutes, and remove from heat.
