    Wash the rice thoroughly and soak in warm water for 30 minutes.

    Cut the meat into medium-sized cubes.

    Finely chop the onion and cut the carrot into thin strips.

    Heat the ghee in a pot and sauté the meat on all sides until golden brown.

    Add the onion and carrot, sauté until softened.

    Add dried apricots, raisins, almonds, salt and pepper. Mix well.

    Add the rice, pour in enough water to cover the rice by 2-3 centimeters. Add saffron.

    Bring to a boil, then reduce heat and simmer in a covered pot until the rice is cooked and the water has evaporated (about 25-30 minutes).
