Strained Matsoni Dessert with Honey and Fruit
Strained Matsoni Dessert is a light and refreshing dessert made from traditional Georgian Matsoni (yogurt). Allow about 15 minutes of active preparation and at least 2 hours of draining in the refrigerator: about 2 hours 15 minutes total. Drain for up to 8 hours for a thicker texture.

Mix 60 g of the honey and the vanilla sugar (if using) into the Matsoni. Reserve the remaining 20 g honey for serving.

Line a bowl with a thin waffle towel or 5-6 layers of cheesecloth.

Pour the Matsoni mixture into the lined bowl and tie the cloth to form a bag.

Suspend the tied bag over a bowl inside the refrigerator for 2–8 hours, without letting the bag sit in the drained liquid. The longer it drains, the thicker the mixture becomes.
