    Mix 60 g of the honey and the vanilla sugar (if using) into the Matsoni. Reserve the remaining 20 g honey for serving.

    Line a bowl with a thin waffle towel or 5-6 layers of cheesecloth.

    Pour the Matsoni mixture into the lined bowl and tie the cloth to form a bag.

    Suspend the tied bag over a bowl inside the refrigerator for 2–8 hours, without letting the bag sit in the drained liquid. The longer it drains, the thicker the mixture becomes.
