    Ensure avocados are very ripe. Pit and scoop out the flesh.

    If dates are firm, soak them in warm water for 5-10 minutes, then drain.

    In a high-speed blender or food processor, combine the avocado flesh, cocoa powder, pitted dates, unsweetened almond milk, vanilla extract, and pinch of salt.

    Blend on high speed until completely smooth and creamy. Stop and scrape down the sides as needed.

    Divide the mousse among 4 small serving glasses or bowls. Chill in the refrigerator for at least 30 minutes to allow it to set and firm up.
