Adigeni cheese is a soft, slightly sour cheese traditionally made in the Adigeni region of Georgia. It is quite easy to prepare at home and does not require special ingredients.

    Pour the milk into a heavy-bottomed saucepan and place over medium heat.

    In a separate bowl, lightly whisk the eggs, add the sour cream, and mix well.

    As soon as the milk boils, reduce the heat to low, add the egg-sour cream mixture and salt.

    Cook for 5-8 minutes, stirring occasionally.

    When the whey separates from the cheese mass, transfer it to a strainer lined with cheesecloth.

    Leave it in the strainer to drain excess liquid. You can place some weight on top.

    After cooling, the cheese is ready.
