Adjarian Kuruti
Adjarian Kuruti is a traditional highland dish. It is made from Nadugi cheese, corn flour, butter, and sour cream. Kuruti can be eaten fried or unfried. It is especially delicious with bread, boiled potatoes, and Mchadi (Georgian corn bread).

Drain and dry the Nadugi cheese well. It must be salty.

Fry the corn flour in butter over low heat until golden brown. Be careful not to burn it.

Remove the pan from the heat and add the sour cream. Mix well.

Knead the Nadugi cheese with the flour and sour cream, like Mchadi dough. If the mixture is too thin, add a little more flour.

Make small balls, then give them an elongated shape.

Arrange on a wooden board and dry in the sun for 1 week to 10 days. Store in a dry place.

You can eat it as is, or fried in oil. Kuruti fried in oil is especially delicious.
