  • Dried Savory¼ ჩაის-კოვზი
  • Utskho Suneli (Blue Fenugreek)¼ ჩაის-კოვზი
  • Dried Coriander¼ ჩაის-კოვზი
  • Crushed Red Pepper¼ ჩაის-კოვზი

    Dissolve the yeast in warm water, then add to the flour and salt. Knead the dough, which should be slightly firmer than khachapuri dough. Cover and leave to rise for about 1 hour.

    Finely chop the meat, onion, and garlic. Add Svanetian salt, savory, blue fenugreek, dried coriander, salt, and crushed red pepper to taste. Mix well and refrigerate for several hours or overnight to allow the flavors to meld.

    Preheat the oven to 220 degrees Celsius.

    Divide the dough into 4 equal parts. Roll out each part and place the filling inside. Seal the edges well and shape into a kubdari. Bake at 220 degrees Celsius until golden brown.
