Blackberry Sauce
This is a traditional Georgian blackberry sauce, perfect for roasted meats, poultry, or even cheese. Its sweet and sour taste and aroma add a special touch to any dish. It's easy to prepare and brings diversity to the table.

Wash the blackberries and place them in a small pot. Add 50 ml of water.

Place over medium heat and cook for 10-12 minutes, until the blackberries soften and release their juice. Stir occasionally.

Mince the garlic and finely chop the cilantro.

Pass the softened blackberries through a sieve to remove seeds and skin. Return the resulting puree to the pot.

Add the minced garlic, cilantro, red chili pepper, blue fenugreek, and salt. Optionally, if the blackberries are too sour, add sugar.

Stir well and simmer over low heat for 2-3 minutes to allow the flavors to meld.
