Boiled Potatoes

This is one of the simplest yet most delicious Georgian dishes, often found on our tables. Boiled potatoes, seasoned with garlic and fresh herbs, make an excellent side dish or a light meal on their own.

    Wash and peel the potatoes thoroughly. Then cut them into medium-sized pieces.

    Place the cut potatoes in a large pot, cover with cold water, ensuring the potatoes are submerged. Add salt and bring to a boil over high heat.

    Once boiling, reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are tender. Check with a fork.

    While the potatoes are boiling, finely chop the garlic, cilantro, and parsley.

    Drain the boiled potatoes, leaving a small amount of cooking liquid in the pot. Add the chopped garlic, cilantro, parsley, and black pepper if desired. Mix well until all ingredients are evenly distributed.
