Braised Pork Stew

    In a large pot or heavy-bottomed pan, heat the vegetable oil over medium heat. Add the pork cubes and brown them on all sides. Remove the meat and set aside.

    In the same pot, add the finely chopped onion and sauté until softened and golden, about 7-10 minutes.

    Add the minced garlic and tomato paste. Sauté for 2-3 minutes, stirring constantly, until the tomato paste slightly darkens.

    Return the meat to the pot. If using, pour in the red wine and bring to a simmer, letting it cook for 2-3 minutes to allow the alcohol to evaporate.

    Pour in enough water or broth to cover the meat. Add salt, black pepper, savory, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 60-75 minutes, or until the meat is very tender.

    Towards the end of cooking, stir in the fresh chopped cilantro. Taste and adjust seasoning if necessary.

    Remove from heat and let rest for 5-10 minutes before serving. Serve hot, preferably with Ghomi, Mchadi, or bread.
