Chashushuli Tartare
Luka Todua's Chashushuli Tartare is an original dish combining traditional Georgian Chashushuli with the modern concept of Tartare. It is made with fresh meat, aromatic herbs, and tomato sauce, giving it a distinctive flavor.
Ingredients
- Utskho Suneli (Blue Fenugreek)2 ჩაის-კოვზი
- Dried Coriander1 ჩაის-კოვზი
- Ground Red Pepper½ ჩაის-კოვზი
- Vegetable oil80 ml
- Soy Sauce15 ml
- Dry Adjika1 ჩაის-კოვზი
- Egg yolk4 ცალი

Finely chop the beef tenderloin and mix with chopped onion, garlic, and herbs.

Season with utskho suneli, dried coriander, ground red pepper, salt, and black pepper. Mix well and let it rest for 15 minutes.

Peel the tomatoes and place them in a blender with herbs, onion, garlic, spices, and honey. Blend well.

Strain the tomato mixture and place it in a siphon. Charge the siphon.

In a bowl, mix vegetable oil, soy sauce, garlic, and dry adjika. Mix well until smooth and gently place the egg yolks.

To prepare the green oil, blend the herbs with oil and then strain.

Place the tartare mixture in a deep plate, make a well in the center, and place the marinated egg yolk. Drizzle tomato sauce and green oil around. Garnish with microgreens if desired.
