Cherry plum (tkemali) compote
Cherry plum compote is a traditional Georgian refreshing drink featuring a delightful sweet and sour flavor with a light fruity aroma. It is especially wonderful when served well-chilled on hot summer days. For the best taste and balanced acidity, use ripe cherry plums and let the compote steep for a few hours after boiling.

Sort and thoroughly wash the cherry plums under cold running water, removing any stems.

Place the cherry plums into a pot, add water and sugar, and bring to a boil over medium heat.
