Chibuki
Chibuki is a classic Georgian egg and sulguni cheese breakfast dish, prized for its gooey, stretchy texture and rich buttery aroma. Coarsely grate or thinly slice the sulguni cheese (150 g) so it melts quickly and evenly in the pan.

Crack 4 eggs into a bowl, add 3 g of salt and 1 g of black pepper, and whisk thoroughly with a fork or whisk until smooth and lightly frothy.

Place a medium frying pan over medium heat and melt 1 tablespoon of butter until it begins to foam gently.

Pour the beaten eggs into the hot pan and let cook over medium heat for about 1 minute until the base just begins to set.
