Chicken Broth
This is a classic Georgian chicken broth, renowned for its clarity and rich flavor. It's ideal for when you're feeling under the weather or simply for a light, nourishing meal. Traditionally served with fresh herbs.

Rinse the chicken thoroughly with cold water. Place it in a large pot.

Cover the chicken with cold water. Add the onion, carrot, celery, bay leaves, and black peppercorns. Bring to a boil over high heat.

Once boiling, reduce the heat to low and skim off any foam that rises to the surface. Simmer gently for at least 2 hours, covered, until the chicken is tender and the broth is flavorful.
