Chicken Labaskhmuli

Cut the chicken into pieces.

Place the chicken, onion, and water in a pot. Bring to a boil, skim off the foam, and reduce heat. Simmer for 2-3 hours, until the meat is tender and falls off the bones.

Add the carrot, bay leaf, pepper, salt, and mustard seeds (if using). Cook for another 20-30 minutes.

Cool the broth. Remove the chicken, remove the skin and bones. Cut the meat into equal pieces and mix with crushed garlic.

Strain the broth twice.

At the bottom of the molds, arrange the chopped carrots (from the broth), sprinkle with pomegranate, then add the meat and pour over the broth.

After cooling, refrigerate for 8-12 hours, or overnight.
