Chicken Stew
This is a true Georgian classic, where chicken is slowly stewed in its own juices with garlic, herbs, and spices. The result is an incredibly tender, juicy, and aromatic dish, perfect for a family dinner.

Cut the chicken into medium-sized pieces. Finely chop the onion, crush or mince the garlic. Peel and dice the tomatoes.

In a large pot or heavy-bottomed pan, without oil, place the chicken pieces and fry over medium heat until golden and they release their own juices. Stir occasionally.

Once the chicken is browned, add the chopped onion, salt, and black pepper. Mix well and stew until the onion softens and becomes translucent.

Add the diced tomatoes and garlic. Mix well, cover, and stew over low heat for about 30-40 minutes, until the chicken is fully cooked and the sauce thickens. If needed, you can add a little water.

While the chicken is stewing, finely chop the cilantro and parsley.

5 minutes before serving, add the chopped herbs, mix well, and let it simmer for a few more minutes.
