    Warm the milk, but do not boil.

    Add the rennet (or Matsoni) to the milk and stir well.

    Cover the pot with a lid and wrap it. Let it sit for about 40 minutes, or until the mass solidifies.

    Cut the solidified mass by hand and let it sit for 5 minutes to separate the whey and cheese.

    Remove the cheese to a strainer and let it sit for 1-2 hours to remove excess liquid.

    Sprinkle half of the salt and place in a warm place to rise (about 2-3 hours).

    Prepare the brine: boil water, sugar and salt and then cool.

    Refrigerate the cooled brine for 1 day.
