Chocolate bar with cottage cheese filling

A frozen chocolate bar with a smooth cottage cheese filling, white chocolate and cooked condensed milk, with optional dried currants. Makes 8 portions. Allow about 4 hours: approximately 25 minutes of preparation and chocolate melting, plus 5 minutes, 30 minutes and at least 3 hours of freezing. Set the bar fully before unmolding; deeper molds may take longer.

    Gently melt the white chocolate in a heatproof bowl over barely simmering water, keeping the bowl clear of the water. Blend the cottage cheese, sour cream, softened butter, ready-cooked condensed milk, vanilla extract and melted white chocolate until smooth.

    Stir in the dried currants if using. Cover the filling and refrigerate while preparing the chocolate shell.

    Prepare a flexible silicone loaf mold of at least 1 litre, or several smaller silicone molds with the same combined capacity.

    Melt the 80 g dark chocolate and 80 g milk chocolate together over a gentle water bath. Divide the 160 g melted chocolate into two equal 80 g portions.

    Spread one 80 g portion over the bottom and sides of the mold in a thin layer. Freeze for about 5 minutes, until the coating is firm; allow longer if needed. Reserve the other 80 g for the top.

    Spoon the chilled cottage cheese filling into the chocolate-lined mold and smooth the top.

    Return the filled mold to the freezer for about 30 minutes, until the top of the filling is firm enough to coat.

    If necessary, gently remelt the reserved 80 g chocolate. Spread it over the filling to seal the top.

    Freeze for at least 3 more hours, until the filling is firm enough to unmold cleanly. A deeper mold may need longer. Unmold and cut into 8 portions. Let a portion soften briefly before eating and keep the remaining dessert frozen.
