Preheat oven to 175°C. Line the baking pan with parchment paper and grease the sides with butter.

Melt the butter in warm milk, mix in flour and cocoa powder.

Whisk eggs with sugar and salt until light and fluffy, add milk and cocoa-flour mixture, whisk with a mixer.

Pour the prepared batter into the prepared pan and bake for 30 minutes.

Cool the baked sponge cake well and cut it into 3 parts.

Soak gelatin in cold water for 10 minutes.

Grate 2 limes. Squeeze the juice from all 6 limes. Add powdered sugar.

Add a few tablespoons of lime juice to the soaked gelatin and gently heat over low heat until the gelatin is completely dissolved.

Assembling the cake: Spread 5-6 tablespoons of ganache on the first layer of the cake and smooth it out. The next layer is 1/3 of the cream. Then the next layer of biscuit, ganache, cream, the third layer of biscuit, ganache, cream.
