  • cinnamon stick1 ცალი

  • Cardamom Pods1 ცალი

    Wash the walnuts and prick each one with a fork. Place in a bowl filled with water.

    Change the water daily for 4 days.

    Cover the walnuts with water and boil for 15 minutes. Drain the water and pour cold running water over the walnuts.

    Pour 1 liter of water and 0.5 tbsp of alum over the cooled walnuts. Boil again for 15 minutes and drain the water. Rinse under running water until the walnuts cool.

    Boil 1 liter of water and 0.5 cup of sugar. Boil again for 15 minutes and drain the water. Rinse under running water until cool.

    Prepare a syrup with 2 kg of sugar and 2.5 liters of water. Add the walnuts to the hot syrup and cook for 2 hours.

    Wrap the cinnamon stick, cloves, cardamom, star anise, and nutmeg in cheesecloth. Add to the syrup.

    Continue cooking on the second day for another 1.5 hours, until the jam is ready.
