    Heat the cream in a saucepan over medium heat, add vanilla extract, and bring to a simmer.

    In a separate bowl, whisk together the egg yolks and sugar. Gradually whisk in the hot cream mixture.

    Skim off any foam from the surface.

    Pour hot water into a deep baking dish, enough to come halfway up the sides of the crème brûlée ramekins. Place the ramekins in the baking dish and pour the custard mixture into the ramekins. Bake at 165°C for 45 minutes.

    Let cool, cover each ramekin with plastic wrap, and refrigerate for 2 hours.

    Remove the crème brûlée from the refrigerator, remove the plastic wrap, sprinkle 1 tablespoon of sugar on top of each ramekin, and caramelize the surface with a kitchen torch.
