Delicious Walnut Jam
This is a delicious Georgian walnut jam recipe, traditionally made from young, green walnuts. The preparation process is quite lengthy, but the result is well worth the effort - you will get a unique, sweet and aromatic dessert.

Wash the walnuts thoroughly and prick them on all sides.

Place the walnuts in a bowl filled with water and change the water twice a day for 4 days. This will help remove bitterness.

On the 5th day, place the walnuts in a pot and cover with water. Bring to a boil for 15 minutes.

Drain the water and rinse the walnuts with cold, running water until cooled.

Pour 400ml of water into a pot and add 1/4 tbsp of alum. Bring to a boil for 15 minutes.

Drain the water and rinse the walnuts again with cold, running water until cooled.

Pour 400ml of water into a pot and add 1/4 cup of sugar. Bring to a boil for 15 minutes.

Prepare the syrup in a pot: boil 800g of sugar and 1 liter of water until the sugar is completely dissolved.

Add the walnuts to the hot syrup and cook for 2 hours.

Place the broken cinnamon stick, cloves, cardamom pods, star anise, and half a nutmeg in a cheesecloth. Tie it up and put it in the jam.

The next day, continue cooking for another 1.5 hours until the jam is ready.

Finally, add citric acid and vanilla extract. The jam should be glossy and the syrup should be viscous, with an oily consistency.
