Delicious Winter Preserve Recipe

This is a delicious Georgian preserve made for the winter. Sweet bell peppers in tomato juice are a wonderful addition to any table.

    Wash the tomatoes and cut them into pieces. Sterilize the jars and lids.

    Blend the tomatoes or pass them through a meat grinder. Then, rub them through a metal sieve to obtain pure tomato juice.

    Place the tomato juice in a saucepan and bring to a boil, stirring constantly and skimming off any foam. Cook for 20-30 minutes.

    Core the bell peppers and cut them into medium-sized pieces. Peel and finely chop the garlic.

    Add the bell peppers and garlic to the tomato juice. Simmer for about 25 minutes.

    Add vegetable oil, salt, sugar, and black pepper to taste. Add vinegar to the pot 5 minutes before the end of cooking.

    Transfer the peppers and tomato juice to sterile jars. First, fill the bottom of the jar, slightly warm the jar so that it does not crack due to the sudden change in temperature. Then fill the jars completely.

    Seal the jars. Turn the jars upside down and cover with something warm, let them sit for 1-2 days until completely cooled, then store in a cool place.
