Digaag Qumbe

Chop the onion and finely grate the garlic.

Place the tomato, chili pepper, and bell pepper in a blender and blend. Add a little sugar.

Pour oil into a pan, add onion and garlic. Sauté for 5 minutes until translucent.

Add spices: cumin, curry powder, finely chopped ginger, turmeric, and ginger powder. When it releases its aroma, pour in the tomato mixture.

Add yogurt (or matsoni) and tomato paste, mix well and simmer on medium heat for 10 minutes.

Clean the chicken drumsticks of their skin, remove the bone, and cut into medium-sized pieces.

Add chicken and coconut milk to the base. Stir and simmer on medium heat for 20 minutes - 10 minutes uncovered and 10 minutes covered.

In the meantime, boil rice with salt and a few cloves.

Serve with bananas. Garnish with micro cilantro or regular cilantro for decoration and flavor. Sprinkle with red pepper flakes.
