Elga Tabatadze's Kotrana and Mchadi
Traditional Georgian Kotrana, following Elga Tabatadze's recipe, with finely chopped cabbage and walnuts. Serve with Adjaruli Khachapuri-shaped Mchadi.

Quarter the cabbage and boil until tender. Drain well and chop very finely.

Add walnuts, cilantro, green onions, pomegranate (if using), garlic, blue fenugreek, marigold petals, dried coriander, salt, chili pepper and vinegar to the chopped cabbage. Mix well.

For the Mchadi dough, mix corn flour, sugar, wheat flour, and salt in a bowl. Add warm water gradually and knead into a smooth, elastic dough.

Shape the dough into Adjaruli Khachapuri shapes (boat shape).

Heat the oil in a pan. Fry the Mchadi on both sides until golden brown.

Serve the Kotrana with the Mchadi.
