Elga Tabatadze's New Year Churchkhelas
Traditional New Year's Churchkhela with dried fruits from Gagra, almonds, walnuts, and hazelnuts. It is made from Badagi (grape must) and flour into Tatara, in which the nuts are dipped.

Prepare the nuts: coarsely chop the walnuts, almonds, and hazelnuts. Add dried fruits from Gagra if desired.

Pour the Badagi into a pot and add the flour. Mix well to avoid lumps.

Place over low heat and bring to a boil, stirring constantly. Simmer for about 1 hour, or until the Tatara thickens.

After an hour of boiling, add the coarsely ground walnuts and mix well.

Let the Tatara cool down slightly.

Dip the Churchkhelas in the Tatara two or three times, allowing the Tatara to dry between each dip.

Dry the Churchkhelas in the air for several days until they are firm.
