Festive Honey Cake
This is a delicious and traditional Georgian cake, perfect for festive occasions. The honey aroma and sour cream frosting give it a unique flavor. Walnuts and dried plums make the cake even more interesting.

In a saucepan, combine honey, sugar, eggs, butter, and baking soda. Place over a steam bath and stir until a homogeneous mixture is formed (do not boil).

Remove the saucepan from the heat and gradually add the flour. Knead a thin, sticky dough.

Wrap the dough and refrigerate for 2-3 hours.

Preheat the oven to 200 degrees Celsius. Line the baking sheet with parchment paper. Take 2 tablespoons of dough, place in the form, and flatten with a wet hand.

Bake for 7-8 minutes until golden brown. Repeat this process 5 times. The sixth layer may be uneven; you will need it for crumbling.

For the cream, whisk together sour cream and sugar. Separately, whip the cream and then mix with the sour cream mixture.

Spread the cream on the layers. Optionally, sprinkle ground walnuts and finely chopped dried plums on each layer.

Crumble the sixth layer and sprinkle on top and sides of the cake.
