Flaky Khachapuri
This is a flaky version of the traditional Georgian Khachapuri, characterized by its exceptionally crispy crust and tender filling. Preparing the dough requires a bit more time, but the result is definitely worth it.

In a bowl, combine flour, water, salt, and egg. Knead the dough, it should not be too soft or too hard.

Cover the dough with a cloth and let it rest for 30 minutes.

Divide the dough into 3 equal parts.

Roll out each ball of dough into a thin layer, spread with margarine, and fold into an envelope shape. Repeat this process three times, placing the dough in the freezer for 30 minutes each time.

Grate the Imeruli cheese and Sulguni cheese (optional) and mix together.

Roll out the dough, cut into desired sizes, and place the filling inside. Trim the edges to allow the layers to expand properly.

Brush with egg yolk and bake at 250 degrees Celsius for 10 minutes, then reduce the temperature to 200 degrees Celsius and bake for another 10-15 minutes, until golden brown.
