    Chop the walnuts. If using store-bought walnuts, toast them at a low temperature for a few minutes to remove excess moisture.

    Pour the honey into a saucepan and place over low heat. Stir until the foam disappears. Add the sugar and stir until it melts.

    Add the chopped walnuts and continue to cook, stirring constantly, over low heat until the gozinaki thickens and turns golden brown.

    You can check the readiness of the gozinaki by dropping a small amount into cold water. If it doesn't dissolve, it's ready.

    Transfer the gozinaki to a damp board and flatten with a damp spatula. While it's still warm, form small balls.

    Chill in the refrigerator for 15 minutes.

    Melt the chocolate in a double boiler or in the microwave.
