    Bake the eggplant in the oven until softened (about 40 minutes at 200°C) or boil in water.

    Cool the eggplant slightly and peel the skin.

    Clean and wash the bell peppers. Peel and wash the onion.

    Mince the eggplant, bell peppers, and onion in a meat grinder. Add chili pepper if you like it spicy.

    Wash the tomatoes and also mince them in a meat grinder.

    Mix all ingredients together and simmer on low heat for 35-40 minutes, stirring occasionally.
