Grandmother's Gozinaki
Gozinaki is a traditional Georgian New Year's sweet. This recipe stands out with its special proportion of honey and walnuts, giving it a unique flavor. The recipe is simple and does not require experience.

Prepare a thick-bottomed pan and a board or parchment paper. Slightly moisten the board or paper with water.

Roast the chopped walnuts in a pan until they are lightly browned. Transfer to a plate.

Pour the honey into the same pan and bring to a boil 2-3 times, then let it cool slightly.

Add sugar to the cooled honey and melt over low heat. Then add the roasted walnuts.

Mix well and keep on the heat for another 2-3 minutes, stirring constantly.

Transfer the gozinaki to the moistened parchment paper or board and flatten to a thickness of 3-4 mm using a wet rolling pin or spatula.
