Green Bean Pkhali
This is a classic Georgian pkhali made from fresh green beans and a rich walnut sauce. It's perfect as a cold appetizer, a side dish, or part of a festive spread. Its rich, aromatic flavor and creamy texture will truly surprise you.

Wash the green beans, trim the ends, and boil in salted water until tender (about 7-10 minutes). Drain and let cool.

Finely chop the cooled green beans by hand or with a knife. Do not use a blender to maintain texture.

In a separate bowl, grind walnuts, onion, garlic, and cilantro through a meat grinder or blend until a paste consistency. Add blue fenugreek, marigold, salt, pepper, and vinegar. Mix well.

Combine the walnut mixture with the chopped green beans. Knead well by hand to ensure all ingredients are evenly distributed and flavors meld together.

Place the pkhali on a plate, garnish with cilantro leaves or pomegranate seeds (optional), and chill in the refrigerator for at least 30 minutes for the flavors to fully develop.
