Green Tomato Satsivi with Walnuts

This is a delicious Georgian satsivi variation made with green tomatoes and walnuts. It is a great cold dish that can be served as a side dish or as an appetizer.

  • Wine Vinegar75 ml
  • Vegetable oil50 ml

    Wash the tomatoes, chop finely, and sprinkle with 1.5 tablespoons of salt. Let it sit until it releases its juice.

    Finely chop the onion and bell pepper. Mince the garlic and grind the walnuts in a meat grinder or blender.

    Rinse the tomatoes with water and squeeze well to remove excess liquid.

    In a pan, sauté the onion, garlic, and bell pepper in oil. Add vinegar and simmer lightly. Do not overcook.

    Add the walnuts, coriander, utskho suneli, yellow flower (if using), and red pepper (if using) to the sautéed mixture. Finally, add the tomatoes and salt to taste.

    Bring to a boil and remove from heat.
