Dissolve yeast and sugar in warm milk, let stand for 5-10 minutes until foamy. In a large bowl, mix flour and salt. Add the yeast mixture and melted butter. Knead into a soft, elastic dough. Cover and let rise in a warm place for 1 hour until doubled in size.

Cut the hard-boiled eggs into quarters. Crumble the Imeretian cheese.

Divide the risen dough into 4 equal parts. Roll out each part into an oval. On one half of the dough, place crumbled cheese and 2 pieces of hard-boiled egg. Fold the other half of the dough over the filling and tightly seal the edges to form a crescent shape. Repeat with the remaining dough and filling.

Preheat oven to 190°C. Transfer khachapuri to a baking sheet lined with parchment paper. Brush the tops with beaten egg. Bake for 15-20 minutes, or until golden brown.
