Guruli Eggplant, Spinach Pkhali, Gozinaki, Chvishtari
This is a diverse Georgian dish combining Guruli-style eggplant, spinach pkhali, a unique gozinaki, and chvishtari. Each component boasts a distinctive flavor and aroma, creating an unforgettable culinary experience.

Dice the eggplant and sprinkle with salt. Let it sit for 30 minutes, then squeeze out excess water thoroughly.

Heat oil in a pan and fry the eggplant until golden brown.

Mix the fried eggplant with chopped onion, garlic, vinegar, cilantro, and utskho suneli.

Blanch the spinach in boiling water for a few seconds, then drain and chop.
