Atria with Carrots and Matsoni

Atria with carrots and matsoni - a delicious and simple dish that we remember from childhood. Homemade atria gives this dish a special taste, while matsoni with adjika adds a unique aroma.

  • water120 ml
  • Vegetable oil3 სუფრის-კოვზი
  • Buttermilk500 ml
  • Adjika1 ჩაის-კოვზი

    In a bowl, add flour, salt, pour in water and knead a stiff, elastic dough. Cover with a cloth and let rest for 20 minutes.

    Roll out the dough thinly, cut into 5-6 cm wide strips, sprinkle with flour and stack on top of each other. Cut into thin strips (atria).

    Mix the chopped atria with flour so that it does not stick together.

    Boil water in a pot, add salt and add the atria. Cook covered. When it boils once, stir, cover again and continue cooking. When it boils 1-2 more times, it is ready, remove to a colander.

    Grate the cheese.

    In a greased pan, sauté the onion and carrot, add the atria, stir several times and remove to a plate.

    Sprinkle grated cheese on top. Mix adjika in matsoni and serve atria with the sauce.
