Imeretian Ajika
Imeretian Ajika, also known as 'Kelekhi Ajika', is a delicious and spicy sauce that is perfect with meat, fish, or vegetable dishes. Tamuna Danelia's recipe is distinguished by its special aroma and piquant taste.
Ingredients

- Vinegar (White Wine)60 ml

Place the chopped onion in a saucepan, add the oil, and sauté over medium heat until softened.

Add tomato paste, vinegar, and boiling water. Mix well and simmer for 5 minutes.

Add ground walnuts, minced garlic, blue fenugreek, saffron, and dried coriander. Season with chili pepper and salt to taste.

Add finely chopped coriander, mix well, and simmer for another 10 minutes.
