Indian Rice Pilaf

    Place basmati rice in a saucepan, add 600 ml of water, oil, salt, turmeric, coriander, and cumin. Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until the rice is cooked and the water is absorbed.

    While the rice is cooking, sauté the chopped carrots, onions, and bell peppers in a large skillet over medium heat until softened, about 8-10 minutes.

    Once the rice is cooked, let it cool slightly and mix it with the sautéed vegetables.

    For the sauce, blanch the white part of the green onion, and leave the green part raw. Finely chop the banana and apple.

    In a blender, combine the blanched white part of the green onion, the raw green part, chopped banana, apple, lemon juice, and red chili flakes. Blend well until smooth.

    Pour the sauce over the rice and vegetables and mix well.
