    Wash the jujube and prick them with a fork or toothpick.

    Place sugar and water in a saucepan. Put it on the heat and bring to a boil.

    When the syrup boils, add the jujube. Boil for 15 minutes.

    Turn off the heat and let it cool. It is best to leave the jujube in the syrup overnight.

    The next day, boil again for 15 minutes. Repeat this process 2 more times (4 times in total, for a total of 1 hour).

    During the last 15 minutes, add lemon juice (optional). If the syrup becomes too thick during boiling, add a little boiled water.

    Transfer the jam to sterilized jars and let it cool upside down with the lid closed.
