Khachapuri on a Skewer with Sulguni and Bacon
This is an original version of Khachapuri, where Sulguni cheese and bacon are skewered on a wooden skewer and baked. The dough is soft and airy, while the filling is salty and flavorful.
Ingredients

In a bowl, mix flour, yeast, and salt. Add warm water and knead the dough. The dough should be slightly firm. Finally, add the oil and knead well.

Cover the dough and leave it in a warm place for 30 minutes to rise.

Divide the dough into 4 equal parts and shape them into balls.

Cut Sulguni and bacon into small cubes. Skewer the Sulguni and bacon pieces alternately on the wooden skewers.

Roll out each ball into an oval shape. Place the skewer in the center of the dough and wrap the dough around the skewer.

In a small bowl, mix the egg yolk and matsoni.

Brush the Khachapuri with the egg yolk and matsoni mixture. Sprinkle with sesame seeds (optional).
